Peru · Finca Achirayuc Geisha

A washed Geisha from high Incahuasi, Cusco — tap for the full story.

Peru — Finca Achirayuc Geisha

Rose · jasmine · black tea · lychee · candy-like sweetness

For the next Meridian release we are sending a coffee that sits right in the Meridian lane: rare variety, careful process, and a cup worth a slower brew. Finca Achirayuc is produced by Jose Gonzalez at 2280 masl in Acconcharcas, Incahuasi (also written Inka Wasi), La Convención, Cusco, Peru.

Why this one for Meridian. The farm is only 1.5 hectares and grows Geisha Panama under pacay and pisonay shade. At this elevation, cool temperatures slow cherry maturation and help build the density and aromatic clarity that make Incahuasi coffees so distinctive. Jose is a member of the Cooperativa Agraria Cafetalera Valle de Incahuasi.

Process. This lot is washed and processed with double fermentation. Cherries are selectively picked, held in GrainPro bags for 48 hours under cool conditions, then pulped and dry fermented for 32 hours in their own mucilage before washing. The parchment is dried on raised beds for up to 15 days — a slow process that helps preserve floral aromatics, clean sweetness, and fine acidity.

In the cup. Rose and jasmine lead, followed by black tea, lychee, and a candy-like sweetness. The profile is expressive but composed, with a clean finish that stays clear from the first sip to the aftertaste.
